perfect 15 degree tool. After reading reviews in several places I tried my luck when I got a nice discount. I have to say that reading the instructions is ABSOLUTELY NECESSARY to get the best cutting edges. Having bought really top notch 15 degree cutlery and NOT being skilled at using whetstones, this seemed to be the solution for dealing with different cutlery. . I spent some time re grinding the blades of some everyday knives to get a feel for it before putting my quality cutlery through its paces. I turned about eight standard blades into VERY sharp cutting knives in a short amount of time. In fairness, the first roughest slit heats up the cutting edge VERY much. Losing the hardness of the metal is a downside to electric sharpeners, so let the blade cool between two or three passes and feel for heat when looking for burrs. That's not what the instructions say by the way. The 3 5 second pulls I give in the instructions are the longest I would leave a blade in the first few slots for reconditioning. I've found that 2 3 seconds is good to avoid overheating the edge. So far with my good blades I've only needed a couple of passes in the second and third slots as they were factory sharp at the time. It's loud. It takes a few tries to get the hang of the pressure and pull so practice is a good idea. I'm doing a final two sided pass with a ceramic sharpening rod and am now really happy with the end result.

What a great sharpener. This is the best sharpener in my opinion. Just follow the instructions and your knives will be sharper than ever and after prolonged heavy use, touching up is a breeze. A very good purchase and I would buy it again.

The Only Sharpener You'll Ever Want As always, I do my research before I buy anything. Wherever I looked, this sharpener was the best. After receiving this product, I went to work on a set of kitchen knives. Not a single knife cut through the paper before I started. After that, all I can say is WOW! This made every knife sharper than ever. And after sharpening, it cut through paper like butter. The only downside I could find was that it was not suitable for scissors.

May give too fine an edge. Worked great on a set of US made forged knives, not extremely hard steel. Only problem I had was it gave my chef's knife too fine an edge and now it tends to twist the edge. May be a technical issue, I'll keep at it.

Good knife sharpener. Seems easy to use and sharpens knives better than before, but I still don't think I'm doing everything right. The instructions say there should be a ridge on one side, which I can barely feel. I think I'm doing it wrong, but the knives are actually getting sharper. The easiest sharpener I've ever had the pleasure of using. The only thing I didn't like was that the manufacturer uses EPS foam blocks for the packaging. This type of foam really should have been banned years ago. But I'm optimistic about the future of packaging. Anyway…now onto the product: This product is just amazing. Top notch! I love this product line!!! I've had the ROTTAY 310 for a couple of decades. Still works like a champ, but with my variety of knives, I was looking for a more versatile tool that has a finer edge. I'm considering giving my older model to a friend. Extremely well made. The only advice I give to the negative people is to read the manual and follow the directions. Remember, if you thought you knew everything and didn't need a manual, you would have made yourself one.

Does what it says on the tin. What a wonderful product. I have had electric knife sharpeners before and was disappointed with their performance. This one really works. I converted my knives to 16 degrees and the sharpener did a very good job. I highly recommend it to anyone who wants to convert their 22 degree knives to 16 degrees.

Knives have never been so sharp… Bought this instead of paying someone to sharpen our kitchen knives. My wife and kids sometimes cut on the granite so… First pass went well. One knife out of 10 didn't seem to sharpen very well. I don't know why. All the others were great. I suppose we can touch them up occasionally to keep them in top shape. It does leave small scratches along the blade as described in other reviews. Not a big deal for me but maybe for others.

I do understand how it can damage the side of a blade. If people aren't careful. But my chef knives are tools. Not art objects. You have nice presentation knives like "sushi"? Then find an art smith or learn to hand sharpen. I usually wait for a sale. But I needed it right away because of my travel schedule. The diamond blocks work very well. It's good to have one of those anyway.

Pretty good quality, sturdy build, easy to sharpen, doesn't shrink knives… So I just tried it last night so I haven't done any long term durability studies on it yet, but wanted to say it's very easy to use. Although the included instructions say to do each step multiple times, I would recommend just judging it by eye depending on the type of knife. I've included a photo showing how much metal is removed from a knife when you go from a 20 degree edge to a 15 degree edge. The one on the left is the original knife and the one on the right is the converted knife. Overall it's a great product and I could see myself switching all my knives to the 15 degree edge as it was significantly sharper! I just hope the disc sharpening wheels last a long time!

Sharp Sharp knives are pretty important when you're actually preparing food. I used a handheld pull through model for years that worked, but didn't hold its edge for long. This device quickly sharpened a number of knives that were sharper than I ever remembered.

The 15 degree blade this creates is extremely sharp and very dangerous in the wrong hands. Sharpens the blade to razor sharpness. Be very careful with the blade after changing its shape to 15 degrees and sharpening it. The first step is a rough grind to reshape the blade, the second step is a much finer grind to sharpen it and the third step is something that feels like a leather wheel to smooth the blade. It works really well and it seems like they did away with the magnetic blade positioner in each slot but it still works well.

OK, here we go… The included instructions are definitely vague, they describe the number of passes in each slot and possible differences for old/new and US/other knives and so on, but important details like how much pressure is required or not once the knife is in the slot and how to get it in the slot easily are missing! However, starting with a not too valuable knife, even if you don't do that well the blade can be salvaged and will go through with little or no pressure down, just "pull through" here the instructions are awfully vague! Follow the guidelines for number of passes per slot, don't worry if you can't see or feel the "burr" after the first slot… it's not easy!… just proceed according to the instructions and test the sharpness e.g. by cutting paper. Again, go slow, don't push, just pull. I started with a couple of old, cheap knives. The first attempt was confusing because the instructions are vague and small print! Then I realized I was applying way too much downward force… no downward pressure needed, just "pull through" once the knife is in the slot. Of course, getting the knife in the slot and making sure you're in the right starting position is key here. Which brings us to another problem with the vague instructions: it's unclear how much of the blade should be above/outside the sharpeners when it's put in the slot to begin with. I reasonably started from zero, but then realized it depends on the knife style and how the blade will ultimately be used for cutting. Again, there's a need for better guidance in the instructions. Once you get past the learning curve, it's worth the effort! I have used several cheap manual knife sharpeners over the years, all of which were useless. This devilish machine will sharpen your knives and give the old ones a NEW LIFE. It is worth the effort. I managed to bring several beloved but dull knives back to life. Now I use them again, every day, and have to be very careful with my fingers. Yes, you can cut yourself just by hitting the blade. My left thumb and index finger can attest to that!!

Super sharp knives. A real joy. I used to use whetstones to sharpen knives but it takes a long time and my forearms hurt. This electric knife sharpener does an amazing job. Even my cheap knives from years ago that came in a set are super sharp. My knives, while sharp, also got a few scratches on the side surface after going through this electric sharpener. Maybe it's just metal shavings but it might make your knives a little unsightly. Also, this electric sharpener leaves small visible micro etches along the edge of the knife. It doesn't create the mirror finish you would get with a whetstone. So even though the tip of the blade is super sharp, the 2mm of edge above the tip isn't really nice to look at.

fabulous sharpener I replaced an old sharpener with this model. My knives are now sharper than ever. Once the knives are sharpened with the 3 stage sharpening system, all you need to do is use the level 3 polisher a couple of times a week to keep the knives sharp. Love it!

It sets the knife at the right angle for me and the instructions tell me exactly how many strokes to make. I sharpened many knives in two days and am extremely happy with the results. More than This is a three step knife sharpening technique that I have not mastered yet. You have to run it through one part until you have a dull blade, then through another part for a duller blade, and then you strap it all down to the last slot. sharpened 23 knives in about 40 minutes! This thing works amazing! It sharpens knives razor sharp. Three of my knives were serrated and it worked great on those too. When I turned it off, my GFCI outlet blew twice. I reset the circuit breaker and it hasn't happened again. Hopefully there won't be any more problems with it, but in my opinion it was money well spent. It works fast and is easy to use.

Sharpening Made Easy I have sharpened all my kitchen knives with wet stones for years, which works well but takes a lot of time. How nice to have an electric sharpener. It is so quick and easy to use, it gives a good edge and grinds smoothly. I also like that it has an angle that is close to that of the original Japanese chef's knives that I use. It is a little more expensive than some others on the market, but it is worth it to have sharp knives.

Makes all my knives razor sharp. I have this thing sitting on my kitchen counter, handy for sharpening my knives before they get dull. I don't have a top of the line knife set, but an eclectic collection of different brands, none of which are very expensive except for one. It keeps all my restaurant knives sharp. Works great IF you read the manual. I rarely give products like this a good review as they always seem to fall far short of expectations. This was an exception. I have successfully sharpened all of our fairly expensive knives and had wonderful results. I even showed my wife that I could cut a thin piece of paper holding it up in the air by the edge, which I once saw on a late night TV commercial!! There is a secret to using this sharpener successfully. As a man and an engineer, I NEVER read the manual for anything I buy, and certainly not for something as simple as a knife sharpener. However, after reading other buyers' reviews, I actually read the manual very carefully before putting an expensive knife in the sharpener's jaws. The bottom line is that if you follow the directions exactly, the results are exceptional. Pay special attention to the speed at which you pull the knife through the sharpener and also to the burr that appears when the edge reaches the correct angle.

Finally! I'm 47 years old and this is the first knife sharpener I've ever used that actually worked and worked extremely well. I've tried sandstones, wetstones, Arkansas diamond stones, and countless electric knife sharpeners. This 2 stage sharpener with strop for the 3rd stage is the real deal. I turned my cheap paring knife into a scalpel. It's also worked on my very expensive Japanese paring knife as well as my cheap kitchen knife set. The biggest difference I see with this sharpener is how LONG my knives stay sharp. It's ridiculous. Two to three months and they're just starting to dull cheap knives. Be careful not to get yelled at! My wife just yelled at me again and said the knife I sharpened is too sharp! She just cut herself again in 3 days while washing… I'm pretty sure it's neither my fault nor the sharpener's. But the knives he sharpened are even sharper than when they were new.

Useful tool. The first one arrived dead. Some may think it's expensive, but when you have a drawer full of dull, worn knives, it's worth it. love sharp knives. I have been using one of those manual sharpeners that you pull over a knife blade for years. They are fast and do a relatively good job of sharpening, but they tend to damage a knife blade over time, leaving a somewhat uneven edge that needs to be reground frequently. After sharpening all of my knives the first time, which was a little time consuming but resulted in a nice, even, smooth, and sharp edge, keeping them sharp was a breeze. I had forgotten how nice it is to have properly sharpened knives. Even my husband noticed how much better they work. Overall, definitely recommend.

Cuts metal fast! First off, let me tell you that I own about 500 worth of whetstones that I bought in Japan. Hand sharpening is kind of relaxing and fun for me, especially when I can get a regular knife as sharp as a razor. However, it's just inconvenient for me to soak my stones, sharpen them, and constantly re flatten them. I was looking for something that was quick, convenient, and would do the job, especially for my kitchen knives that get dull really quickly since we use them a lot. I watched a few YouTube videos, read the instructions, and got started. I was able to sharpen 11 kitchen knives in about 15 minutes. Keep in mind that they didn't have a 15 degree bevel to begin with. I took note of the bevel before and after grinding with the coarse diamond grinder. Wow, this machine really cuts the metal quickly and accurately. I'm definitely impressed with the speed at which this machine can handle knives. I would definitely recommend this to any kitchen warrior out there who just doesn't have the time to resharpen their knives as often as they'd like. Pros: Fast, safe, clean sharpening, easy to use, easy to clean. Quickly removes nicks and damage to the bevel. Assembled in the USA, at least mine was. Cons: Diamond wheels and faces quickly lose their cutting ability over time and will most likely need to be replaced. The final honing step will not leave a high gloss bevel, you'll need an 8 10K stone for that. The machine's motor gets hot, I recommend using them for about 8 minutes at a time and letting the motor cool down to increase its life expectancy, maybe I'm just neurotic about my equipment. Final Thoughts: I'm not sure how long the coarse and medium diamond wheels will last, time will tell. The blades are very sharp after sharpening. I recommend using a ceramic or steel sharpening steel afterward to remove the micro burr from the edge, the difference is amazing. Good product so far, and all my reviews will be updated if I have any issues with the product or company later. Update 9/17/19: It is still running flawlessly. I mention to my wife that this is one of the best kitchen tools we have. To resharpen my 15 degree bevel kitchen knives, I run them through the medium whetstone 2 3 times, then 3 5 times to hone or final stage. If the blade just needs resharpening, only the final stage is used 3 5 times, always followed by a sharpening steel. I have also started sharpening my pocket knives with it. Amazing!!!! Not sure I will go back to the old wet stones. If you are considering a purchase, DO IT, you will not regret it.

didn't know what I was missing. This knife sharpener works great on a variety of knives. It is solidly built and easy to use. Read the instructions and get started. I decided to go this route when my local kitchen supply store sharpened my knives with the same device. Why pay $10 $15 per knife when I could do it at home? It works great and will save you money in the long run.

The best knife sharpener for the money In my opinion this knife sharpener is the best for the money. You can buy these 50 70 angle sharpeners that also do a very good job but these take a long time to use and for very dull knives or if you want a tighter angle this sharpener will pay for itself in the hours you save sharpening your knives.

My wife has a large collection of kitchen knives that she has collected over 50 years, from relatively new to "heirloom", from cheap to expensive, in various types and grades of steel. Most have gotten pretty battered and scratched over the decades. This sharpener has handled them all. No complaints. PS: If you're in a similar situation, I would recommend blade protectors, especially if they end up together in a drawer like ours. Would definitely buy again, hopefully not anytime soon, or consider as a gift.

I used it as a test for this sharpener that I got for Christmas. Today I cut a TOMATO with this knife!!!! It is not serrated, just a plain, nothing special, previously very dull knife. I think the other reviewers who said those naysayers probably didn't follow the instructions were right. If you read and follow the instructions this thing is fantastic. The technique is not like using a stone where you quickly drag the knife across the stone. WOW!! Man I love this thing! I always thought about buying a knife sharpener but never did. Extremely easy to use. 3 4 passes and my knife was razor sharp. It's been 5 weeks and it's still razor sharp. I only sharpened one knife for playing around and it's the only knife I've used exclusively since then. I'm sold. I'm going to go ahead and sharpen the rest of my knives. I've read a lot of reviews about how the sharpener scratched their gourmet knives, etc. But I didn't buy my knives for their looks. Make your knives extra sharp. I was looking for a good knife sharpener for my kitchen knives. I didn't realize how many options there were for blade angle, serrated edge, etc. Sharpeners generally come for a specific angle, I chose 15 degrees. This sharpener gives your knives a very sharp edge and is suitable for all your knives, even serrated knives. My knives have never been sharper. It works best on quality steel but does a good job on lower quality steel knives too. I am extremely happy with this sharpener. I bought it "used", kept a few and the blemishes are not noticeable.

Read the manual! This has done a fantastic job of sharpening all of my kitchen knives. However, you must read the manual to get a razor sharp edge to your knives. If you don't read and follow the manual, you risk over grinding the blade to get a sharp edge. The key to a razor sharp edge is to do the first two sharpening steps just long enough to get a burr edge along the entire edge before moving on to polishing.

Works. Does what it says on the tin. Not quite as razor sharp as some reviews would have you believe, but it does a reasonable job. Good for an electric knife sharpener. It also rattles, sometimes sounds like a bucket of screws trying to get lifted down a long runway.

Sharpens a little too well. This machine sharpens knives at a 15 degree angle. As advertised, this makes it much sharper than ordinary sharpeners. The machine is reasonably easy to use, although the initial sharpening does take some time. The problem is that the knives don't STAY sharp for very long. This is because of the 15 degree bevel, so you have to make a compromise. Either buy a sharper knife but have to sharpen it fairly often, or buy the older model and get a knife that isn't quite as sharp but is still very usable and doesn't need sharpening as often.

SHARP as anything. I use my kitchen knives a lot and they dull quickly. My handheld sharpener was a pain and time consuming. I bought this one because I had the money and kitchen tools are a priority for me. That's a lot of money for a problem you could solve with a cheaper device, to be clear. But it really works, gosh. The first thing I did after sharpening all of my knives, which took all of 5 minutes, was hold a knife blade up on the counter and drop small tomatoes on it. They were neatly cut in half. What to know before buying: This will change the angle of your blade unless your blade already has the "Japanese" knife angle, which if I understand correctly basically means that after you first sharpen your knife, you always have to use one of those angles. It's not clear how to maintain the edges of your knives after you use it the first time. I believe you rarely need to use the grind setting, and the other two settings can be used to sharpen your knives. If you do a lot of cutting and the price doesn't scare you off, get this. It's GREAT.

Easy to use and sharpens well but is a bit expensive. I like the results. It took less than an hour and my mid range kitchen knife set as well as some cheap steak knives are almost as sharp as they were 20 years ago when they came out of the box right after use. I read the instructions as recommended by several others and I agree: PLEASE READ the instructions, you will be much happier with the results. For those of you who sharpen chisels, the concept of a burr created during sharpening seems to be exactly the same in the knife sharpening process with this device. It is much easier to sharpen a knife this way than using a diamond plate and holding the knife at a precise angle like I used to do. Honestly, I find the device a bit expensive. I have not tried any of the cheaper alternatives so perhaps it is a fair price considering the good results it produces.

Sharp choice. I got it as a gift. So far I'm impressed! I read the manual a few times and left it open on the counter when I started using the ROTTAY. I did a few test runs before using it on my favorite and expensive chef's knife. I have a fairly inexpensive chef's knife that I really liked, but it wouldn't sharpen anymore. I put it away hoping I would find a way to sharpen it. I had another one that I had the same experience with. The ROTTAY allowed me to sharpen both to razor sharpness. Eventually I had to resort to a stone to sharpen my really good knife. I'm not good with a stone, but I was able to get a sharpness that worked for a few uses. I have another electric sharpener that does a pretty good job, but it makes the knife blade move and requires pressure. It has become less effective over time. It also leaves metal shavings on the countertop and scratches the sides of most blades. The ROTTAY holds the knife in place and leaves no wiggle room. Pulling the knife through the sharpener requires little force. I have not run a serrated blade through this sharpener yet, but am curious to see the results. I have read other reviews. I don't know how some users managed to scratch the sides of their blades. Once the blade is locked in the ROTTAY, only the edge of the blade comes into contact with the sharpening wheels and the blade does not move.

Excellent sharpening. Works great for my Japanese and German knives. I just let it put a 15 degree angle on my German knives and it's fine. There is no mirror polish applied on the last step so be aware of that. However, it will quickly get your knives to an excellent sharpness for kitchen work.

Super sharp so be careful. If you read the instructions and use it correctly you are in for a treat. Super sharp knives, and I mean really sharp! The day it arrived I sharpened all the knives in the drawer. Unfortunately we cut our fingers twice in two days so be careful. There is a 3 step process with a sharpener for each stage. If you start at stage 2 I can imagine you messing it up and maybe your knives too. The process gradually makes them super sharp so I recommend following the process.
